“Aine’s recent visit to our Sure Start showed parents that cake decorating was something they would be able to do at home. It was both affordable and fun to do. “My 14 year old daughter Mary had suffered severe effects from glandular fever last year and as a result her immune system had weakened. Mary’s energy levels were low and as her appetite had been reduced her eating habits were far from healthy. Unfortunately, this in turn affected her mood which was also low. There was little that our GP could do to help which is why I approached Aine. After a lengthy consultation, Aine devised a 4 week programme which was very easy to follow. The programme involved a gradual introduction to healthier foods and an explanation was given to the long term benefits of each food type. Two month’s later, Mary’s energy levels are back to where they should be and we now have a healthier, happy and more energetic teenager in our home. Mary’s new lifestyle will stay with her for the rest of her life. My sincere gratitude goes to Aine, whose enthusiastic influence motivated Mary to make the required changes. “Last Saturday I was fortunate enough to attend an extravaganza of Mediterranean foods. If you get the chance you really need to check this one out. Imagine tasting sizzling chunky chorizo in a white bean wine sauce with a blazing yellow paella bursting with the flavours of tender squid and the freshest orange king prawn. How about the creamiest shrimp fritters you could think of or a hot creamy butter crispy Serrano sauce over flaky Barramundi fillet . At Aine’s Kitchen in Newry all this exists and so simple to make. We experienced an indulgence of Spanish cooking taught by the chef who is not alone an entertainer but somebody who truly knows how to prepare marvellous foods. If an amazing fiesta of flavours accompanied by the finest of red and whites on a Saturday afternoon sounds like fun, believe me it is . “I enrolled on the “Taste of Spain” course at www.aineskitchen.com  as I enjoy Spanish food and wanted to learn more.  Not only did I learn lots about the food of Spain but I also improved my general cooking skills with tips and cooking advice given by Aine.  Throughout the class Aine was professional, yet approachable and willing to answer any questions that I had.  The hands-on class was a great way of learning how to cook the dishes chosen and I now feel very confident re-creating them at home.  The Recipe Folder to take home will now sit amongst my own cookbooks for future use.

Aine’s classes are informal and very relaxed and I love the idea of the sit-down meal to finish off the class as it gave me a chance to talk food with the other class participants and also to ask more questions.  Overall, a great way to spend a Saturday and I enjoyed it so much that I have now booked onto the “Italian Food Made Simple” class in Spring 2014.
