Christmas Biscotti

Ingredients

  • 180g Plain Flour
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 130g caster sugar
  • 1-2 large eggs, beaten
  • Zest of 1 orange
  • 100g dried cranberries
  • 100g chopped dark chocolate (70%)

Instructions

  1. Heat oven to fan 160C/gas 4. Line 2 baking sheets with baking paper. Put the flour, baking powder, spice and sugar in a large bowl, then mix well.
  2. Stir in the beaten eggs and orange zest, then bring the dough together. Add the fruit and nuts, then work them in until evenly distributed.
  3. Turn the dough out onto a lightly floured surface and divide into 4 pieces. With lightly floured hands, roll each piece into a sausage about 30cm long. Place 2 on each tray, well spaced apart. Bake for 25-30 mins until the dough has risen and spread and feels firm.
  4. Remove from the oven, transfer to a wire rack for a few mins until cool enough to handle, then turn down the oven to 140C/fan 120C/gas 1.
  5. Using a bread knife, cut into slices about 1cm thick on the diagonal, then lay the slices flat on the baking sheets. Bake for another 12-15 mins, turn over, then bake again for another 12-15 mins until dry and golden. Cool on a wire rack

Blueberry Cookies

Blueberry Cookies

Blueberry Cookies

Ingredients

  • 4oz / 110g gluten free plain flour
  • 1 tsp baking powder
  • Pinch of salt
  • 1oz / 30g caster sugar (or Xylitol)
  • 3oz / 80g dairy free butter
  • 135 ml oat cream (Oatly brand)
  • 6oz / 190g fresh blueberries

Instructions

  1. Preheat oven to 180 degrees and line a baking tray with silicone paper
  2. Sift flour and baking powder into a bowl with salt and stir in sugar.
  3. Rub butter into flour mix until it resembles breadcrumbs.
  4. Stir in oat cream until it forms a lump mix and add blueberries very gently.
  5. Drop tablespoons full of mix onto baking tray and bake for approx 20 mins until golden.
  6. Cool on tray for 5 minutes and remove to a wire rack to cool completely.
