Fudgy Fruit Bars (Countrysports Fair 2016)

Ingredients

  • 1-2 tablespoons goji berries
  • 90g raw nuts & seeds (almond, cashew, walnut, brazil, pumpkin, sunflower etc)
  • 20-25 Medjool dates (or similar with the stones removed)
  • 1-2 tablespoons raw cacao powder (depending how chocolately you like it)
  • Zest of 1 large orange
  • 1 tablespoon ground cinnamon
  • Vanilla extract

Instructions

  1. Blitz everything together in a blender until relatively smooth. Shape into bars or bite sized balls and store in the fridge for up to 3 days.
  2. Note: try using different combinations of nuts & seeds in this recipe to vary the flavour and texture.
